1½ c unsweetened shredded Coconut

1½ c Flour
½ c Cornstarch
1 tsp Kosher Salt
1 tsp Baking Powder
½ tsp Baking Soda

2 large Eggs
1 c Buttermilk
1 c Whole Milk
2/3 c Coconut Oil [Butter], melted
¼ c Sugar

Directions:
Directions:
Preheat oven to 400°F. Toast coconut on a rimmed baking sheet until golden brown, about 2 minutes. Let cool.

Whisk flour, cornstarch, salt, baking powder and baking soda in a large bowl.

Whisk eggs, buttermilk, milk, and sugar in a medium bowl.

Whisk buttermilk mixture into dry ingredients (do not overmix).

Mix in half of the coconut, reserving the other half.

Cook the waffles until golden brown.

Serve with butter, syrup, and reserved coconut.
