1 lb med-sized shrimp, raw, shelled and deveined
6-12 small clams (these can be skipped if expensive
6-12 mussels

1/2 lb sausage
1½-2 pounds chicken, cut up
2 teaspoons salt
pepper

olive oil
½ cup chopped onions
1 teaspoon chopped garlic
2 large tomatoes, peeled, seeded and chopped
1 red pepper, seeded, de-ribbed an cut into strips

3 cups long grained rice
¼ teaspoon saffron thread, pulverized with a mortar and pestle
6 cups boiling water (after boiled) - you can add beer or wine in place of some of the water.
½ cup peas

-Shell and devein shrimp

-Scrub clams and mussels thoroughly. Remove black, rope-like tufts from mussels, if they have them. Set aside/

-Place sausage in skillet, prick them. Add cold water to cover them. Bring to a boil, then simmer uncovered 5 minutes. Drain on paper towel and slice into ¼ rounds.

-Wash, dry chicken. Season with 1 teaspoon salt and pepper. Heat ¼ cup olive oil over high heat. Add chicken (skin side down - if you leave on skin), brown on both sides. Remove to plate.

-Add sausage to pan and brown pieces. Remove. Cut up sausage and chicken into large chunks.

-Pour off fat and add ¼ cup olive oil. Add onions, garlic, red pepper and tomatoes. Stir constantly, cook briskly until most the liquid evaporated and set aside. Don't cook it until mushy. This is the sofrito.

-Preheat oven to 400º.

-In the paella pan add - sofrito, rice, 1 teaspoon salt, and saffron. Mix.

-Pour in boiling water, stirring constantly, bring to a boil over high heat. Remove.

-Arrange chicken, sausage, fish on top of rice. Scatter peas on top.

-Bake 20-30 minutes. Don't cover. Don't stir.

-When done, remove and drape a kitchen towel loosely over the top to let rest for 5 minutes.Garnish with lemons and serve on meal from the pan in the middle of the table.

You can add lobster, pork, green beans, artichoke, and anything else to this recipe.
You can also cook this on a grill. A crust of browned rice will form on the bottom and in Spain, if it's not burned, they like to serve this with the meal.
