4 porkchops about ¼ inch thick
1 large egg
⅓ cup flour
½ cup bread crumbs
Salt and pepper
2 glugs of olive oil (⅓ cup?)
1 cup applesauce with a squeeze of lemon added

Directions:
Directions:
1. Smash porkchops with wooden mallet or bottom of small fry pan.
2. Sprinkle porkchops with salt and pepper.
3. Set out 3 pie plate type of dish with sides. In one pan, mix egg with fork. In second pan put flour. In third pan, put bread crumbs.
4. Dip pork chops in flour pan till coated.
5. Dip porkchops in beaten egg.
6. Dip porkchops in dry bread crumbs and pat crumbs on.
7. Heat oil in fry pan.
8. Cook porkchops in oil for about 2 minutes. Turn over and cook second side.
9. Set on paper towel to drain excessive oil.
10. Serve with spiced applesauce.
