Ingredients:  
Set oven to 350º
6 eggs separate yolks from whites
Add 1/2 t. Cream of Tartar to whites
Whip whites until very stiff
Beat yolks until frothy
Add to beaten yolks
1 - 1 1/2 C mashed potatoes
1/4 C flour
1/2 t. salt
1T sugar
Mix together well
Fold egg ingredients into whipped whites
Spray a fry pan with cooking spray
Scrape all ingredients into the fry pan
Bake for 30-35 minutes or until a toothpick inserted
comes out clean.
Serve with butter, syrup, warm jam or any
toppings you like.
