2 cups cooked rice
2 T. onion, chopped
1 T. vinegar
2 T. oil
3/4 t. curry powder
2 t. salt (I salt my rice and then add salt to taste)
1 cup celery, chopped
1 pkg. (10 oz.) frozen green peas, cooked, drained, and chilled
3/4 cup mayonnaise

Directions:
Directions:
While rice is hot, add onion, vinegar, oil, curry powder and salt. (If you salted the rice, you may not need to add more. Taste to see.) Chill mixture at least 3 hours. To serve, add celery, peas and mayonnaise.
