3 c. chicken broth
8 oz. dry orzo
¼ c. olive oil
2 T. minced garlic
1 (5 oz) bag fresh spinach, coarsely chopped
¼ c. lemon juice
1/3 c. sun-dried tomato, packed in oil
1/3 c. grated Parmesan cheese
¼ c. pine nuts, toasted

Directions:

Bring chicken broth to a boil in a medium saucepan; add orzo and cook until just al dente (about 10 minutes). If it gets too dry before orzo is cooked, add a cup of hot water. Drain over a bowl to capture excess liquid.
Heat olive oil in a medium, deep skillet; add garlic and heat until aromatic, do not brown. Add lemon juice and spinach; cook until spinach is barely wilted. Add cooked orzo, excess cooking liquid, tomato, and cheese; toss to mix. Sprinkle pine nuts over and serve with extra Parmesan.

Makes a great side for fish or chicken. Leftovers may be combined with additional chicken broth, 1 (14 oz.) can flavored petite diced tomatoes, and ½ cup of frozen baby peas for a really good soup.
