1 1/2 lbs little potatoes, quartered
2 tablespoons canola oil
2 cups onions, chopped 1/2” thick
2 cups carrots, chopped 1/2” thick
2 cups celery, chopped 1/2” thick
Kosher salt

2 cups chicken stock
1 tablespoon fresh chopped dill (or 1 teaspoon dried)
1 can evaporated milk
2 cups cooked chicken (or ham, pork or roast beef)

Directions:
Directions:
Heat the oil in heavy saute pan over medium heat. Once hot, add the onions, carrots and celery and cook for five to 10 minutes over medium low heat until slightly tender and the onions are translucent. Season with salt and pepper. (You can do this step the night before and refrigerate the vegetables until the next morning.)
In the slow cooker, add the cooked vegetables, potatoes, chicken stock and dill. Season with salt and pepper. Cook on slow according to your slow cooker instructions and head off to work.
When you come home, simply turn up the heat, stir in the evaporated milk and chicken and cook until hot. Serve.
