1 gal HG flour
12 oz. shortening
2 oz. yeast
1/3 C Sugar, granulated
1/4 C Salt, iodized
3 qts water, to start

Single proof, use instant yeast, slowly add water until desired consistency

Sandwich loaves 11oz portions
House loaves (shallow 1/3pan) 20oz.

Bake at 400F at high fan for 15 minutes or until golden brown, rotating halfway through cooking process.
