Ingredients: Dissolve:
2TBS or 2pkg dry yeast in 1/2 cup very warm water 1/2 tsp sugar Let stand till yeast begins to foam up
Add remaining ingredients to dissolved yeast
2 TBS sugar 2 TBS melted butter 2 tsp salt 2 cups hot water 3 cups bread flour (2-3 cups bread flour for adding after first mixing) total of 5-6 cups bread flour

Directions: In a large mixing bowl dissolve the yeast in the water & 1/2 tsp sugar, let stand about 5 min. till yeast starts to foam Add remaining ingredients. Mix using a paddle mixing blade until very smooth. Switch to a dough hook ( or knead by hand) and add another one to two cups of bread flour to make a smooth elastic dough. Shape into a ball and cover with food grade plastic wrap and let rise in a warm place until double in size, then punch down and let rest 15 min. Divide dough in half and roll out dough into a rectangle and then begin to roll it into a long French loaf. Place the dough into French loaf pans or onto a flat cookie sheet and let rise until slightly double in size. Preheat oven to 400° after the dough has risen, brush the tops with a well mixed combination of one egg and 2 tablespoons of milk. Sprinkle with poppy seeds or sesame seeds, and make about 4 angled slashes across the tops of the bread. Baked approximately 18 to 20 minutes and remove from the oven and let cool 5 minutes before removing from pans.
