Ingredients: 2 sticks butter, room temperature ½ c. confectioner's sugar 1 T. vanilla 2 c. flour 1 c. ground or very finely chopped nuts

Directions: |
Directions:Cream butter and sugar together until fluffy. Add vanilla, flour, and nuts and mix just until combined. Chill until firm enough to roll into balls.
Preheat oven to 350º . Roll dough into 2" balls, place on parchment lined cookie sheet and bake for about 15 to 20 minutes until just beginning to brown on the edges and bottom -- Do not over bake.
Remove to wire rack and cool until easily handled but still warm. Immediately roll in confectioner's sugar and finish cooling on rack. Roll in sugar again before storing in airtight container. |

Notes: My mom called these Pecan Sandies, but my daughter Cindy is allergic to pecans so I started using ground almonds for her, just switch out half of the vanilla for almond extract. That worked well so I experimented with other nuts and other forms. Hazelnuts and walnuts both work great. You can form them into little logs and drizzle with or dip the ends into melted chocolate instead of rolling in the powdered sugar. You can also roll the dough into 2" logs, wrap in plastic and chill overnight. Then unwrap and slice into 1/4" slices, sprinkle with sugar and bake as above.
