Chicken. (your choice of whole chicken, parts, or hen)
Chicken broth
1 egg
Self rising flour

Directions:
Choose chicken with a lot of skin. You want your broth to be rich. Boil chicken and debone. Salt to taste.
In a large bowl, add flour to almost top of bowl. Make a well in the middle of flour. Add egg. Add hot broth (about 1/2 cup) slowly stirring with a fork to mix egg. Do not let broth begin to cook egg. With your hands, mix broth, egg and flour. Keep incorporating flour. Add enough broth to make the amount of dumplings that you want, For my boiler I add about 2 cups of broth. Keep doing this until dough is stiff. Divide the dough in about 4 parts. On a well floured board roll out each ball of dough with a well floured rolling pin. Roll until real thin. The secret is to use a lot of flour. Cut in small pieces. To your broth add enough water to 1/2 to 3/4 boiler full. Bring to a boil. Slowly add dumplings one at a time to boiling broth. Watch closely as it will burn. By the time all dumplings are added, your dumplings will be done. Stir very gently. Do not tear the dumplings. Add black pepper to taste. Add chicken. Cover and let stand.

If you want to make your dumplings ahead of time you can roll out your dumplings and freeze. Just layer on a cookie sheet with foil between each layer. This is what I do on special occasions. Gives me a little more time on the day of occasion.
