1# - 1 -1/2# Boiled chicken Breast (cooled and Broke up)
Broth from cooked chicken (Approx. 12 cups)
Powdered Chicken Boullion (to taste)

Noodles
2 cups flour
3 eggs yolks
1 whole egg
2 teaspoons salt
1/4 to 1/2 cup water

Boil chicken in approx 12 cups of water, season with salt, pepper and chicken Boullion. Parsley (Optional) After chicken is completely cooked, removed chicken from the broth. Cover Broth with lid and set aside. Break chicken up and add back to broth. Then make noodles while chicken is cooking.
Measure Flour into bowl, make a well in center and add egg yolks, whole egg and salt. With hands, thoroughly mix egg into flour. Add water, 1 tablespoon at a time, mixing thoroughly after each addition. (Add only enough water to form a ball.
Turn dough onto well floured cloth covered board, Knead until smooth and elastic, About 10 minutes.
Cover and let sit 10 minutes. Divide dough into 4 equal parts. Roll dough, 1 part at a time into paper thin (or desired thickness for noodles) rectangle. Cut dough into 1/8 inch strips for narrow noodles and 1/4 inch for wide noodles. All about 3 inches long. Repeat this for remaining 3 parts of dough. When all noodles are cut, lay out on a towel to dry for at least 2 hours.
Cook in boiling chicken broth until tender.
