2 lbs thighs, drumsticks and/or breasts (can use boneless skinless chicken pieces)
4 slices bacon
½ lb. fresh sliced mushrooms (can omit and will still taste good)
1 clove garlic, minced
2 TBSP flour
1 package dry onion soup mix (1¾ oz)
1 c water
1 cup red wine
2 TBSP chopped parsley
1 bay leaf
⅛ tsp thyme

1. Fry bacon until crisp; cool then crumble and set aside.
2. Pour off all but 2 TBSP of bacon fat from fry pan.
3. In a large skillet or Dutch oven, brown chicken pieces over medium heat.
4. Push chicken to the sides, add mushrooms and garlic, adding bacon fat or olive oil if needed to cook. Cook 2 - 3 minutes, stir in flour and dry soup.
5. Add water, wine, parsley, bay leaf and thyme, covering all the chicken pieces.
6. Cover and let simmer 45 minutes, stirring once in a while.
7. Simmer uncovered 5-10 minutes, until sauce thickens.
8. Plate, covering with sauce and sprinkling bacon crumbs over the top.

When I graduated from IU, I didn't know how to cook anything. So I made photo copies of several of Nana's recipes, including this one, and stapled them to used computer punch cards. Nerd. Anyway, It's easy to make, healthy and so good! If you are going to be away, you can make it in the crock pot. Follow steps 1-5, then place chicken pieces and mushroom/garlic/flour/onion soup mix in crock pot. Add water, wine, parsley, bay leaf and thyme to cover the chicken. Cook on low for 8 hours. The sauce isn't as thick in the crockpot, but still tasty. Garnish with sauce and bacon.
