1 Medium Spaghetti Squash
1 Cup Broccoli Florets
2 Cups 2% Milk
1Clove Garlic, minced
4 Oz's Neufchatel Cheese
¼ Cup grated Parmesan
1 ½ Cup shredded Swiss Cheese
¼ Cup Greek Yogurt
Salt, Pepper to taste
2 cooked Chicken Breasts, diced

Prepare Spaghetti Squash: Place whole spaghetti squash in microwave and cook on high 5 to 6 minutes. Cut squash in half lengthwise and remove seeds. Place squash, cut side down & side by side, in microwave dish with ½ inch of water and cook for 22 minutes. Cool slightly and using a fork pull the squash fibers away from peel. Reserve squash and peel.

In microwave cook broccoli florets about 3 minutes to soften.

Put the milk and garlic in a saucepan over medium-high heat and heat until it just begins to simmer, about 3 minutes. Reduce the heat to medium, add the Neufchatel cheese, Parmesan and 1 cup of the Swiss cheese and stir until melted. Turn of the heat, stir in the yogurt and season with salt and pepper. Add the squash, chicken and broccoli and toss to coat. Divide the mixture between the reserved squash peels. Top with remaining 1/2 cup Swiss cheese.

Place the stuffed squash onto a baking sheet and broil until the cheese is melted and bubbly, a few minutes
