4 tbsp butter
1/2 c Franks hot sauce
2 tbsp tabasco, or other hot sauce, plus more to taste
2 tbsp brown sugar
2 tsp cider vinegar

WINGS: 1-2 qt vegetable oil for frying
1 tsp cayenne pepper
1 tsp black pepper
1 tsp table salt
3 tbsp cornstarch
3 lbs.chicken wings (approx 18)
bleu cheese dressing and celery sticks

FOR THE SAUCE: melt butter in small saucepan over low heat. Whisk hot sauces, brown sugar, and vinegar until combined. Remove from heat and set aside. FOR THE WINGS: heat oil to 350º, mix together cayenne, black pepper, salt and cornstarch in small bowl. You can put the cornstarch-cayenne mixture in a ziplock bag and coat them. Dry chicken and sprinkle spice mixture over wings and toss with rubber spatula until evenly coated. Fry in batches, keeping warm in a 200º oven. Pour sauce mixture into a large bowl, add chicken wings, and toss until wings are uniformly coated. Serve with bleu cheese dressing and celery sticks.

NOTE: a double batch of sauce is enough for 3 dozen wings.
