1 lb medium Shrimp, raw, peeled, deveined
1 can Rotel chopped tomatoes
1 stick butter (not margarine)
1 small onion, chopped
1 green bell pepper, chopped
2 cans cream of mushroom soup
2 cups of instant rice

Directions:
Directions:
Preheat oven to 325. Saute onions and bell peppers in butter. Spray a casserole dish with cooking spray. Mix remaining ingredients together then add onion & butter mixture. Stir until combined. Bake 15 minutes, stir then cook 15 minutes more.

If making the day ahead, mix everything adding the sauteed onions & pepper mixture and place in a covered plastic container using cooked shrimp vs. raw shrimp. Then pour into sprayed casserole dish and just heat through the next day perhaps 20 minutes at 325.
