1 box Duncan Hinds Lemon cake mix.
1 cup all purpose flour
1 cup sugar
1 box instant lemon jello pudding mix
1/2 tsp. salt
4 eggs
1-1/3 cup water
2 Tsp. oil
1 cup sour cream
1 tsp. clear vanilla
2 tsp. lemon extract
Zest and juice from 2 large lemons

Filling and frosting
2 cans sweetened condensed milk
3/4 cup fresh lemon juice
1 8 oz. container cool whip

Cake: Mix all cake ingredients together for 2 minutes. Scrape sides of bowl and mix for an additional minute. Pour into 2 greased cake pans and bake in 350º oven. Done when a tooth pick has a few crumbs clinging to it. Let the cakes cool and divide each layer in half making 4 layers.
Filling and frosting: Combine condensed milk and lemon juice. Let it stand for a few minutes. Save 1/2 half of the of the mixture. Use 1/2 to spread between layers of cake. Mix the cool whip with the other half of mixture and frost the cake. Refrigerate over night. Slice and enjoy. Keep cake refrigerated.
