2 Tablespoons Butter
1 Onion Diced or 1 Tablespoon Dried Onion
1/2 cup Diced Carrot
1 Tablespoon Minced Garlic
2 Quarts Beef or Chicken Stock
1 (12 ounce) can Diced Tomatoes (pureed in blender)
1/2 cup Fresh Baby Spinach
1 Tablespoon Italian Seasoning
1 pound Frozen Italian-style Meatballs
1 pound Cheese Tortellini
Shredded Parmesan Cheese as topping

Directions:

1. Melt the butter in a large pot over medium heat
2. Cook the onion, carrots and garlic in the melted butter until tender, 5 to 7 minutes.
3. Pour the stock into the pot, add the tomatoes, Italian seasoning & meatballs.
4. Bring the mixture to a boil and then simmer.
5. After everything is tender and heated through, about 30 minutes, add tortellini and spinach.
6. Ladle into bowls and top each with Parmesan cheese to serve.
