1 cup Onion minced
1/2 cup diced scallions
1 small can water chestnuts sliced
1 cup of Bean Sprouts
2 cups diced cooked roast pork

2 cups vegetable oil

Sauce/Gravy:

3- 4 slices of Fresh Ginger
1 cup chunked Onion
3-4 cups Unsalted Chicken Stock
1/2 cup vegetable Oil
1/2 cup of Flour:
3 tbs Soy Sauce:
1 tsp Sugar:
1/2 tsp Sea Salt:
2 tbs Oyster Sauce:
1/4 tsp Ginger powder
1 tsp Dark Soy Sauce
1/2 tsp Sesame Oil

An easy recipe done in two parts.

Foo Young Gravy:

1. Saute Onion and Ginger until the Onions are caramelized. Discard the ginger, drain the oil out of the onions and place the onions in a mixing bowl for later.

2. Reheat the onion/ginger flavored oil, add the flour and whisk to create a roux, when it bubbles, continue heating and whisking till it gets golden. Begin to slowly add the chicken broth to get a gravy consistency. At this point, add the Soy Sauce, Sugar, Sea Salt, Oyster Sauce and Ginger powder. After it simmers, add at the last step the Dark Soy Sauce
and Sesame Oil. Place in a serving bowl and keep in a warm place.

The Egg Foo Young Pancakes:

1. In the mixing bowl with the caramelized onions, place the minced onions, bean sprouts,scallions, water chestnuts and pork. Break the eggs over the mixture, and fold the eggs in until the are blended in.

2. Heat the oil in the wok, With a ladle gently set in a portion of the mixture. Cook one at a time, turning it over after about two minutes. Make sure each is browned nicely. Drain the cooked omelet using a wire scoop, and then place in a warm location while you complete the rest.

3. Serve over white rice, with the gravy.

Remember the beauty of Egg Foo Young is that the contents of the Omelets are truly to your tastes and what you have in the house. An left over meats, shrimps and veggies are fair game. The only musts are the eggs, onions and bean sprouts. Anything else, use your imagination.
