2 pounds Brussels sprouts, trimmed and halved
1 small lemon,sliced
4 cloves of garlic, sliced
1/4 C extra virgin olive oil
1 tsp dried thyme
1/2 tsp salt
1/4 tsp pepper
1/3 C Parmesan cheese
1/4 C toasted pinenuts (optional)

Directions:
Directions:
Preheat oven with two racks to 425 degrees. Toss Sprouts, lemon, oil, garlic, thyme, salt and pepper in large bowl. Divide between two oven racks spread in an even layer. Roast for 10 minutes, switch racks and continue to roast for 10-15 minutes. Transfer to a serving dish and sprinkle with cheese.
