1. Maida 1 kg
2. Salt 20 g
3. fresh yeast 20 g
4. Butter 100 g + 400 g (for layering)
5. castor sugar 110 ml
6. gluten powder 5 g
7. calcium powder 3 g
8. Milk 600 ml
9. Filling Chocolate, Cheese

1. Mix all ingredients (except maida) in the pastry mixture.
2. Add maida, (in batches) after 10 minutes of mixing the batter.
3. The consistency of the dough must be tight like Khari.
4. Roll the dough out into about 10 - 12 mm thickness and apply butter on it, trifold the dough and let it rest for 10 minutes. repeat the procedure again twice.
5.The final dough must be rolled into 6 mm thickness.
6. Cut the dough into triangular shape and roll the dough upwards to make the croissant shape. let it prove for 40 - 50 minutes.
7. preheat the oven at 2000 c for 15 minutes.
8. water spray after proving (right before baking)
8. Bake the dough at 2200 c for 15 - 17 minutes.

Tips: Advisable to use 50% amul butter and 50% lily fat
