1. Maida 1 kg
2. Fresh Yeast 30 g (50 gms in winters)
3. Oil 70 ml
4. Salt 20 g
5. Water 400 ml
6. Curd 250 - 400 ml
7. Sugar 50 g

Additional Ingredients

Finely chopped coriander
Finely Chopped Green chillies

{50 - 70 gms extra maida can be used for 1 kg dough for dusting}

Directions:

1. Add curd, yeast, salt, little water, sugar and wix well
2. Add maida and simultaneously keep adding water.
3. Add oil
4. Consistency should be very thin and soft. (softer than white bread)
5. Cut out the dough in 80 gms and roll it into burger buns
6. Let it rest for 10 minutes, covered with damp muslin cloth
7. Press them lightly with washed hands and flatten them into a circle
8. Spread cilantro and chillies on the flattened dough.
9. Keep them for proofing for 30 minutes.
10. Preheat the oven
11. Water spray right before popping the tray into the oven.
12. Bake at 220 - 230 c for 10 - 15 minutes.
13. Oil wash after taking it out of the oven.
14. Serve hot with Chole.
