2 packages frozen chopped spinach
1/2 lb bacon, chopped
3 to 4 tablespoons flour
1/2 pint sour cream
Salt
Pepper

Directions:
Cook spinach in salted water according to package directions. While spinach is cooking, fry bacon in deep skillet until very crisp. Remove from skillet with slotted spoon and put on paper towels.
Keep bacon grease in skillet and turn on heat to medium low. Add enough flour (you may not need all four tablespoons) to bacon grease so that it looks a little dry, continue stirring flour/grease mixture until it turns light brown. When spinach is done cooking,(do not drain) leave it in saucepan and add bacon/flour mixture to the spinach. Start stirring right away because it will start to thicken immediately.
Continue stirring to avoid getting any lumps from the flour/grease mixture. If the mixture is too thick, add a little water to the spinach so it is not too thick. Let it cool slightly, and add sour cream to the spinach mixture. Stir the sour cream throughout the spinach mix. Add bacon to spinach mixture. Taste mixture and add salt and pepper if needed.
