Jack Daniels BBQ Sauce Recipe

1) 1 cup - Light Brown Sugar
2) 1/4 cup - Maple Syrup
3) 2/3 cup - Apple Juice
4) 2/3 cup - Ketchup
5) 3 Tbsp - Balsamic vinegar
6) 1 1/2 tsp - Kosher salt
7) 2 Tbsp - Worcestershire sauce
8) 2 tsp - Yellow mustard
9) 1/4 cup - Bourbon Whiskey (I used Jack)
10) 2 tsp - adobo sauce (see notes)

- if you don't have peppers in adobo sauce, sub 1 tsp liquid smoke and 1/4 tsp tabasco sauce

Directions:
Directions:
1) In sauce pan, mix ingredients 1 to 10 together on med - high heat and bring to a simmer. This will boil over and make a mess if left alone - watch it closely.
2) Simmer 15 minutes whisking as needed to incorporate ingredients and it will start to thicken.
3) After 15 minutes, make a cornstarch slurry - 1/2 Tbsp cornstarch and equal amount water - whisk it into the BBQ sauce and simmer additional 3 minutes.
4) Remove from heat and let cool. It will thicken enough to coat a spoon when cooled.

Notes:
I buy peppers in adobo sauce. I add the sauce, then I quarter a pepper and put it into the simmer. I remove the pepper half way through the simmer. For a more tang in your sauce, leave the pepper in full simmer or blend it into pulp and add to simmer.

When cooled, I run the sauce through a strainer to remove pepper seeds etc.

Recipe above makes +/- 2.5 cups. For more, just double, triple or whatever the recipe.
