4 garlic cloves (thickly cut)
2 Large Onions diced.
1 can tomato paste
Red Wine
1 lb ground pork
2 28 Oz cans whole plum tomatoes (crush in hands before adding)
1 28 Oz can crushed tomatoes
2 carrots
2 bay leaves
oregano
basil
fresh black pepper
cayenne pepper

This recipe has meat in it. For sauce to go with meatballs or a vegetarian sauce, simply omit the meat. Put olive oil to thinly cover the bottom of a heavy bottomed large pot. Add 3-4 cloves of garlic, cut thick. Dice two large onions and sauté until clear. Add 1 can of tomato paste and continue to sauté for several minutes. Fill the empty tomato paste can with wine and add to the onion paste mixture. In a separate pan, sauté the pork until cooked through. Drain the fat from the cooked pork and add to the onion mixture. Add 2 28 ounce cans of whole plum tomatoes, crushed in your hands before adding. If I have home grown tomatoes that I have canned from the garden I use them instead. Add 1 can of crushed tomatoes. Cook on very low for 5 hours. Halfway through cooking add 2 whole carrots, 2 Bay leaves, a sprinkle of oregano, basil, crushed black pepper, a sprinkle of habanero pepper. Remove carrots just before serving. Salt to taste.
