2 (8oz) pkg. of cream cheese
1/4 c. bell pepper, finely chopped
1 small can crushed pineapple
1 T. onion, finely grated
1 c. chopped nuts

Directions:
Drain pineapple until dry. Reserving 1/3 cup of nuts, mix remaining ingredients, including pineapple and roll into a ball. Roll in nuts and refrigerate.

For fall, instead of nuts, I roll in crushed Cheese It and put a jalep. stem on top so the ball resembles a pumpkin. Also at Christmas, it can be rolled in read and green bell peppers to make look festive.
