Sriracha Lime Chicken:

2 Chicken Breast
3 tbsp sriracha
2 limes – juiced
1/4 tsp fine sea salt
1/4 tsp ground pepper

Salad:

4 c. lettuce, chopped
8 pineapples slices–bite-sized pieces OR whole if you want to grill them
1 c. grape tomatoes – cut in half
1/3 c. red onion–sliced or whatever your preference is!
1 avocado, cubed

Lime Vinaigrette:

1/3 c. olive oil
1/4 c. apple cider vinegar
2 limes – juiced
2 tsp raw honey
Dash of salt

Instructions:
1.) Season chicken with salt and pepper.
2.) In a bowl–combine sriracha and lime juice
3.) Add chicken and let marinade in the fridge (I let it marinade for 24-hrs)
4.) Once the chicken is marinaded you can either grill it over medium heat, or pan cook it. I pan cooked mine over medium high heat and added some of the pineapple juice.

*5.) IF you want to grill the pineapple slices–3 to 4 minutes each side.

6.) Once chicken is done cooking, assemble the salad!
