1 Red Onion
6 oz. Cremini Mushrooms
1 Lemon
2 Mini Baguettes
1 Roma Tomato
½ oz. Grated Parmesan Cheese
1 Tbsp. Basil Pesto
1 tsp. Sugar
3 oz. Sliced White Cheddar Cheese
2 oz. Spinach
Olive Oil
Salt and pepper

Preheat oven to 425 degrees.

Slice onion into thin strips. Slice mushrooms. Halve and juice lemon. Hollow out top and bottom of baguettes, saving bread that is scooped out. Dice tomato. Chop spinach for salad.

Toss bread pieces with 1 tsp. olive oil and Parmesan cheese.

In a medium non-stick pan, cook onion and mushrooms over medium-high heat with 1 tsp. olive oil. Stir occasionally until browned, 4-5 minutes. Remove from burner and season with salt and pepper.

Fill baguettes with mushrooms. Top with cheese slices. Place loose bread on baking sheet. Bake until cheese is melted and croutons are golden brown, 5-8 minutes.While sandwich bakes, make salad dressing by whisking together pesto, sugar, 1 tsp. lemon juice, and 2 tsp. olive oil.

Serve sandwich warm with salad topped with warm croutons.
