10 lbs. of Boston Butt
1 cup of water per pound of meat
3/4 teaspoon of salt per pound of meat
1/2 teaspoon each of pepper, garlic powder and any other seasonings you may want
3 bunches of shallots, 4 onions, 4 stalks of celery,
3 jalapenos if you like that flavor, generous amount of mined garlic, unflavored gelatin

Cook all of this until you can pull the meat off the bone. Remove the bones and add 3 bunches of green onions, finely chopped onions, jalapenos and garlic. Use your judgement with garlic. Add red pepper if you prefer the red pepper for flavor instead of jalapenos. Cook this until its the consistency you want. Keep stirring until it shreds. You can leave small chunks. Add 1 1/2 to 2 packs of gelatin per pound of meat. Dissolve in hot water and strain directly into pot of meat while still cooking. Cook 10 minutes or so. Skim as much grease off the top. Pour into pans, skim grease and cool then place covered in refrigerator to set. Slice when cold and firm and serve on a slice of bread or with captain wafer crackers.

Note: If you prefer the meat to be finer and you have a meat grinder, Grind meat once you debone it after its cooled down a few minutes then place back in pot and start the recipe where you are adding all the seasonings and continue on.
