"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
1 lb. Sweet Italian sausage
3/4 lb. lean ground beef
1/2 c. minced onion
2 cloves garlic, crushed
1 (28oz) can crushed tomato
2 (6oz) can tomato paste
2 (8oz) cans tomato sauce
1/2 c. water
2 Tbsp white sugar (brown sugar)
1 1/2 tsp dried basil leaves
1/2 tsp fennel seeds
1 tsp Italian seasoning
1 Tbsp salt
1/2 tsp pepper
4 Tbsp chopped fresh parsley
12 lasagna noodles
16 oz. Ricotta cheese
1 egg
1/2 tsp salt
3/4 pound Mozarella Cheese
3/4 c. Grated Parmesan cheese

Directions:
Directions:
1. Cook sausage, ground beef, onion and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 Tbsp salt, pepper and 2 Tbsp parsley. Simmer, covered for about 1 1/2 hours, stirring occasionally. (great if made the night before)

2. Bring large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8-10 minutes. Drain noodles, rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley and 1/2 tsp salt.

3. Preheat oven to 375.

4. To assemble, spread 1 1/2 cups of meat sauce in the bottom of 9X13 pan. Arrange 4 noodles lengthwise over meat sauce. Spread with ricotta cheese mixture. Spoon 1 1/2 c. meat sauce over ricotta mixture and top with shredded parmesan. Repeat for next layer of noodles and top with remaining ingredients.

5. Bake in preheated oven for 25 minutes covered with non-stick foil. Remove foil and bake an additional 25 minutes. Cool for 15 minutes prior to serving.
