2 cups butter, room temperature
3 cups white sugar
5 cups all purpose flour + 2 tbsp.
2 tsp baking soda
2 tsp salt
4 eggs
2 tsp cinnamon
2 tsp vanilla extract
2 tsp almond flavouring
2 lbs. cut up dates
½ lb. slivered almonds
½ lb. walnuts (coarsely chopped)
¼ lb. brazil nuts (coarsely chopped)
2 yellow pineapple rings (cut up)
2 green pineapple rings (cut up)
½ lb. red and green cherries, cut in half

Preheat at 325º

Mix fruit in an extra large bowl, with 2 tbsp. of flour.

In another large bowl mix flour, baking soda, salt, and cinnamon. Whisk to combine.

In mixer, cream butter and sugar together until fluffy. Add eggs one at a time. Mix well. Add almond flavouring and vanilla extract. Mix well. Slowly add flour mixture a cup at a time, scraping bowl in between. Add all flour and mix well. Add wet ingredients in with the fruit. Mix by hand until well combined. Drop by teaspoonful onto cookie sheet lined with parchment. A small ice cream or cookie scoop works really well too.

Bake 25 minutes until lightly brown.
