1 Recipe Norahs' Perfect Pie (9" double crust)
5 Cups 1/4 inch peeled, sliced,seeded and simmered zucchini
1 Cup sugar
2 Tbls Flour
1 1/2 Tsp cream of tarter
1 Tsp cinnamon
Dash salt and nutmeg
1 Tbls lemon juice
Water or apple juice

Preheat oven 400º
Peel 2-3 medium zuchinni
Cut zucchini in half long ways. Remove seeds with spoon and slice 1/4 inch.
Add to medium sauce pan and keep adding water or apple juice to prevent sticking. Just simmer for 5 minutes and drain well. Add to large bowl and toss with lemon juice.

In a small bowl combine sugar, flour, cream of tarter, cinnamon, salt, and nutmeg. Pour over zucchini slices and toss. Pour into prepared pie crust. Top with second pie crust and flute.

Bake 50-55 minutes

Allow pie to cool before slicing.

Grace Bell gave me this recipe and I make it every Summer. Grace said that she boiled the zucchini slices in enough liguid to prevent sticking. As we all know she didn't do alot of measuring.
