2 kg. potatoes (about 10 potatoes)
8 cups flour
2 tbsp. parmesano or romano
2 eggs
salt

Directions:
Directions:
Peel potatoes and cut into small pieces.
Boil potatoes until soft, strain and mash.
In a large bowl put flour, cheese, eggs and mix.
Knead until dough forms a ball.
Cut into small portions and form into long ropes.
On a floured surface cut ropes into ½ inch pieces.
You can use a fork to create ridges or indent gently with your thumb.
Cook gnocchi in salted boiling water for about 3-5 minutes or until gnocchi have risen to the top.
