Cafe Rio Pork


Ingredients:

6 lbs. pork

2 c. brown sugar
1 (16 oz.) salsa
1 can coke

Directions:
Directions:
1. Place pork in crock-pot. Fill halfway up the pork with water.
2. Cook on HIGH for 5 hours.
3. Drain off water. Cut pork into thirds.
4. Mix together sauce ingredients and pour on top of pork.
5. Cook an additional 3 hours on HIGH.
6. Shred pork with fork. Leave on LOW until ready to serve,
 

Cilantro Lime Rice


Ingredients:

2 c. uncooked rice (I use long grain rice)
2 cloves garlic, minced
2 tsp. lime zest
4 c. chicken broth

1/4 c. freshly squeezed lime juice (can use lime juice from the bottle)
4 tsp. sugar
6 tbsp. fresh chopped cilantro

1. Put first 4 ingredients in rice cooker and cook until done.
2. In small bowl, combine the last 3 ingredients and mix.
3. Pour over cooked rice and gently mix up.
4. Serve immediately.
 

Creamy Tomatillo Dressing


Ingredients:

1 pkg. Hidden Valley Ranch Buttermilk Dressing
1 c. mayo
3 tomatillos
1 c. buttermilk
1/2 clove garlic
1 bunch (or 1 c.) fresh cilantro
1/4 tsp. cayenne pepper (optional)

Blend all ingredients in the blender and refrigerate.

We cook up flour tortillas and put the pork, rice and dressing in them. You could add other things like tomatoes, lettuce, cheese or whatever you'd prefer. Our family likes to eat it with just these 3 things.
