Wash tomatoes in a sink full of cold water. Blanch tomatoes in boiling water for 10 seconds or until the skin splits. Lift tomatoes using slotted spoon and put into ice water. Peel and dice tomatoes. Place into large stockpot. Bring to a boil. Simmer 5 minutes. Add (1T lemon juice & 1/2tsp salt to pint, or 2T lemon juice & 1tsp salt to quart).Fill jars with hot tomatoes and liquid leaving 1/2inch head space. Run knife through jar to release air bubbles. Process pints 35 minutes, quarts 45 minutes in boiling-water canner.
NOTE: for stewed tomatoes only dice 1/6th of the tomatoes, bring to a boil, then add the rest of the whole tomatoes before boiling for another 5 minutes.
