2 c. flour
¼ c. sugar
1 c. cold butter

Filling:
2 c. sugar
7 T. flour
1 c. heavy whipping cream
3 eggs, beaten
5 c. finely chopped rhubarb

Topping:
2 (3 oz.) cream cheese
½ c. sugar
½ tsp. vanilla
1 c. heavy whipping cream (whipped)

Directions:
Directions:
Combine flour, sugar & cut in butter. Press into 9"x13" greased pan. Bake at 350º for 10 minutes.
Combine sugar & flour. Whisk in cream & eggs. Stir in rhubarb. Pour over crust. Bake at 350º for 40 - 45 minutes until custard is set. Cool.
For topping: Beat cream cheese, sugar & vanilla until smooth. Fold in whipped cream. Spread over top. Cover & chill. Store in refrigerator.
