2 tsp. olive oil
12 oz. cooked ham, diced
1 onion, diced
3 cloves garlic, minced
4 c. water
2 tsp. ground ginger
1 tbsp. ground cumin
½ each salt and pepper
1 c. red or green lentils
8 c. chopped kale

Directions:
Directions:
Fry ham, onion and garlic for 5 minutes. Add water and bring to boil. Add lentils and seasonings. Reduce heat and simmer with lid partially covering for 40 minutes. When lentils are soft, add greens and cook 10 minutes. Serve.
