Sesame Salmon Recipe

2 boneless, skinless salmon or trout fillets, 1-inch thick, totalling about 1 pound
1/4 cup breadcrumbs, unseasoned
1/4 cup sesame seeds
all-purpose flour for dusting
1 egg, scrambled
1 leek, chopped (white part only)
1 ounce Triple Sec liquor
1 cup orange juice
dash of Frank's hot sauce or Tobasco
2 tbsp cream - at least 10% half and half, but 18% or heavy cream (35%) is better

Directions:
Directions:
1. Pat fish dry with paper towels. Roll lightly in flour, dip in egg, then roll in breadcrumb mixture which is a combination of breadcrumbs and sesame seeds.
2. Bake in preheated 400ºF oven on foil lined baking sheet sprayed with non-stick spray, on middle rack, for 15 minutes.
3. If topping of fish does not look crunchy, broil for a few minutes, watching to make sure breadcrumbs don't burn. Remove from oven and set aside.
4. Sauce: In saucepan, sauté chopped leek in 1 tbsp butter and 1 tbsp evoo until softened. Add one ounce of Triple Sec, tilt pan slightly and light liquid with a match to flambé. Once flame has subsided, add 1 cup orange juice and reduce heat slightly, stirring constantly until mixture has reduced to about 2/3 of a cup.
5. Mix a dash of hot sauce or a few drops of tobasco sauce into 2 tbsp of cream, then add back to the cooked leek mixture. Stir until warm and serve on top of the fish.
IF THE FILLETS ARE LESS THAN 1" THICK, ADJUST BAKING TIME TO 8-10 MINUTES.

This recipe can easily be doubled as it is rather fussy to make for two. I serve the fish on a bed of spinach which has been sauteed in evoo with a bit of salt, pepper and 2 minced garlic cloves, sliced fresh mushrooms and another chopped leek. Saute the mushrooms first, then add other veggies and spinach last. Very elegant meal. Delicious. Serves 2.
