2 pkgs of Pepperidge farm stuffing mix – Herb seasoning (blue bag)
1 Stick Butter/Margerine
6 Ribs of Celery
1 Lg Onion
1 Lg Lemon
3 Scallions
Chicken Stock (roughly a quart)
Salt & Pepper

• In a saucepan melt butter. Dice celery and 1 large onion and sauté until onions are translucent
• In large mixing bowl place the stuffing mix. Add the celery, onions & butter. Add the juice of one large lemon. Salt & pepper the mix well. Add chopped scallions
• Add chicken stock to moisten but not make soggy. Probably around a quart but no more. Use a low sodium chicken stock. Organic chicken stocks have usually have the least amount of sodium.
• Mix all ingredients together until bread crumbs are moistened. Do not over mix. Place in bowl and dot top of dressing with butter pats. Bake at 350˚ for 45 – 50 minutes.
