Cake:
1/2 cup butter
2 cups sugar
1 cup coconut milk
3 cups cake flour
1 teaspoon baking soda
2 teaspoons cream of tartar
1 cup fresh coconut, grated
6 egg whites, beaten
1 teaspoon vanilla

Icing:
1/4 cup white karo
1/2 cup milk
1 1/2 sticks butter
Pinch of salt
2 cups sugar
Vanilla

Directions:

Cake:
Cream sugar and butter. Combine flour, soda, and cream of tartar and add alternately with the coconut milk. Fold in the coconut, egg whites and vanilla.

Frosting:
Cook all together over low heat until butter melts. Then turn up heat and boil one minute. Add one cup fresh coconut, if desired. (Or, I prefer to sprinkle coconut over iced cake instead of adding to cooked icing.) Beat icing until cool. Keep cake covered and refrigerated.

*Growing up, this was a Christmas tradition that was always served with Boiled Custard.
