1 ½ lb. ground beef
8 onion rings
8 sliced green pepper
16 tbsp. Salt
¼ tsp. pepper
2 c. carrots, diced
2 c. potatoes, diced
1 no. 2 can tomatoes

Directions:
Directions:
Make patties of the ground beef; brown in small amount of fat.
Arrange patties in casserole.
Place on top of each patties a slice of onion, and a pepper ring.
Put two tablespoons quick cooking rice in each ring; season with pepper and salt.
Chop remaining onion and pepper and sprinkle over the patties; add carrots and potatoes.
Cover with tomatoes.
Cook slowly, covered, about 1 hour at 350°F.
