2 c dried Pinto Beans, soaked overnight in water
1 c Yellow Onion, chopped
1 T Garlic, minced
1/2 c Vegetable Oil
1 t Ground Cumin
1 T Chili Powder
1/2 t Salt
1/2 c Monterey Jack Cheese, shredded

Directions:
Directions:
Transfer soaked beans to a saucepan, cover with water by 2 inches and bring to a boil. Lower heat and simmer for about 2 hours , or until beans are very tender, adding water as necessary to keep beans submerged.
(I just cook the beans in my pressure cooker, no soaking!)
Remove beans from heat and mash briefly with a potato masher until they reach the desired consistency.
In a large skillet, heat oil over medium heat and saute onions until translucent, about 5 minutes. Add garlic, cumin and chili powder and mix well. Add beans and stir over low heat for 10 minutes, adding a splash of milk if mixture becomes too thick. Top with cheese and serve.

I use milk to thin out beans ever since my grandson Keith shared the tip with me. Makes the beans very creamy!
