2 cups flour
1 cup sugar
1½ tsp. baking powder
1 tsp. salt
½ tsp. baking soda
¾ cup orange juice
2 Tbl. vegetable oil
1 Tbl. orange zest
1 egg, well-beaten
1½ cups cranberries, coarsely chopped
½ cup chopped walnuts

Preheat oven to 350º
Grease a 9x5" loaf pan.
Mix together dry ingredients in a medium-size mixing bowl.
Stir in orange juice, oil, orange zest and egg. Mix well until blended.
Stir in cranberries and nuts. Spread evenly in loaf pan.
Bake for 55 minutes until a toothpick inserted into the center comes out clean.
Cool pan on a rack for 15 minutes and then remove from pan; cool completely.
