1/4 cup butter
Generous 1/2 cup pancetta, diced
3 1/2 ounces pearl onions
1 garlic clove
3 1/2 ounces mushrooms
1 fresh thyme sprig
1 Tablespoon all purpose flour
1 chicken, cut into pieces
2 1/4 cups red wine
Salt

Salad
Crusty bread

(Serves 4)

Directions:
Directions:
Melt the butter in a pan, add the pancetta, onions, garlic, mushrooms and thyme and cook over low heat, stirring occasionally, for 5 minutes, then sprinkle with flour. Remove and discard the garlic and add the chicken pieces. Cover and cook for 10 minutes, then pour in the wine and season with salt. Cover and simmer over low heat for about 30 minutes until tender and cooked through.

Serve with salad and crusty bread.
