2 tsp. olive oil
1½ lbs. sea scallops
½ tsp. coarse salt
¼ tsp. pepper
2 tsp. butter
3 tbsp. minced shallots
½ tsp. minced garlic
½ c. dry white wine
1 tbsp. fresh lemon juice
2 tbsp. finely chopped fresh flatleaf parsley

Directions:
Directions:
1. Heat oil in a large nonstick skillet on medium high heat.
2. Sprinkle scallops with salt ad papper. Add scallops to pan and cook 2 minutes on each side. Remove from pan and keep warm.
3. Melt butter in pan; add shallots and garlic; cook 30 seconds.
4. Add wine and juice; cook 1 minute.
5. Return scallops to pan; toss to coat. Remove from heat; sprinkle with parsley.
6. Serve with lemon wedges.

Prep Time: 10 minutes
Cook Time: About 5 minutes
Makes 4 servings.
