3 eggs
2 cups firmly packed brown sugar
1 cup oil
2 cups grated zucchini
3 tsp. vanilla
3 cups flour
1 cup nuts (optional)
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
½ tsp baking powder

Directions:
Directions:
Beat eggs until thicken and lemon colored. Gradually beat in sugar. Stir in oil, then zucchini and vanilla. Stir together flour, nuts, cinnamon, salt, baking soda, and baking powder. Add to egg mixture mixing only until all ingredients are moistened. Pour in to 2 greased loaf pans. Bake 325º for 1 hour, 10 min., until inserted knife comes out clean (Check at 60 min). Cool in pan for 10 minutes, then on racks.
