2 large heads broccoli (about 3 lbs.), trimmed and cut into 3 in. florets
½ cup butter
1 medium red bell pepper, cut into strips
1 small onion, diced (about ½ cup)
¼ cup flour
1½ cups milk
1 tsp salt
½ tsp ground black pepper
¼ tsp ground cayenne pepper
1 cup grated sharp chedddar cheese (about 4 oz)

Heat oven to 350º. Grease a 9x13 baking dish. Bring 3 quarts water to boil in a 6 quart saucepot. Add broccoli and return to boil. Cook broccoli 3 to 5 min., until just crisp tender. Drain & place in a large bowl. Melt butter in a 12 in. skillet over medium heat. Add red bell pepper and onion; cook 3 min. Add to broccoli with a slotted spoon. Stir flour into drippings in skillet and cook 1-2 minutes (until blended). Stir milk in gradually; cook and stir until mixture thickens and boils (about 2 min). Stir in salt, black pepper, cayenne pepper and cheese. Mix until cheese is melted. Pour cheese sauce over veggies and mix. Place in prepared dish and bake for 15 minutes.
