Ingredients: 1 lb. ground beef 3 - 4 slices bacon 2 - 3 cloves garlic, chopped 1 medium onion, chopped ½ to 1 green pepper, chopped (depends on size of pepper) 1 can diced tomatoes 1 cup sharp cheddar cheese, grated (or 12 oz. package of shredded cheddar) 8 - 10 oz. macaroni, (cook only 5 minutes in 4 quarts of boiling water) 1 Tbsp. Italian seasoning salt and pepper to taste

Directions:Preheat oven to 350º. Cut bacon into small pieces and cook in a large skillet over medium heat until crispy. Remove the bacon and retain grease. Sauté onions and green peppers in remaining grease. When done, remove onions and peppers and set aside. Drain excess grease. Place ground beef into skillet and brown lightly. Drain excess grease. To the ground beef, add onions, green peppers, bacon, tomatoes, and garlic. Stir and bring to almost boil and reduce heat. Cover and simmer for about 30 minutes. Cook macaroni according to directions, drain and place in a casserole dish. Add ¾ cup cheese, salt, pepper, Italian seasoning, corn, and sauce from the skillet into the casserole and mix thoroughly. Sprinkle remaining ¼ cup cheese over top of casserole. Bake in the oven for at least 40 minutes. It should be bubbly hot when done. [Tip: If the mixture seems dry, add tomato juice to casserole during baking. |
