Ingredients: 1 can (15 oz.) salmon 2 eggs, beaten 1 cup dry bread crumbs. 2 Tbs. Lemon juice 1/2 cup chopped onions. 1 tsp. Prepared mustard ¼ cup chopped parsley. 2 Tbs. Oil

Directions: |
Directions:Drain and flake salmon, reserving ⅓ cup of liquid. Combine salmon with bread crumbs, onions and parsley. Add eggs, juice, mustard and liquid. Shape into patties and fry over medium heat until browned. |

Notes: I make very few of my mom's recipes today mainly because we try to eat a little healthier. Many of my mom's dishes were heavy with meat, especially when Everett was at the table. We often ate pork with cabbage or sauerkraut with dumplings and gravy. I remember when my mom would drain the sauerkraut juice from the can into two juice glasses and she and I would sip our sour little "cocktails" while peeling the potatoes. My mom also often made beef roast with potatoes and gravy, roast chicken with potatoes and gravy, and even something called HEART GRAVY ( I don't think I got dessert that night.). Oh, most of it was all very yummy and I licked my plate just like my brothers and sisters did.
Another reason I don't cook like my mom is that I'm not as good as she was at it and most of the time I don't want to take the time to do it.
This is one recipe my mom used to make that doesn't take much time and it is pretty healthy so I make it quite often for my family. Even the grand kids like it. It was no doubt a Lenten favorite.
