1½ cups brown sugar
1½ cups water
4 Tbsps flour
4 Tbsps cornstarch
⅛ tsp salt
¼ cup cold water
3 beaten egg yolks (reserve egg whites for meringue topping)
2 Tbsps butter
1 tsp vanilla

MERINGUE

3 egg whites
¼ tsp cram of tartar
¼ cup sugar

Saucepan
Double boiler
Baked pie shell

Heat brown sugar and 1¼ cups water to boiling point.
Mix together flour, cornstarch and salt with ¼ cup cold water in the top of double boiler.
Pour the brwon sugar syrup over the flour mixture slowly, stirring constantly. Cook in the double boiler untill thick. Add the egg yolks, butter and vanilla and cook 2 minutes longer.
Cool and pour into pie shell. Cover top with meringue

MERINGUE
Preheat oven to 350º

Beat egg whites until stiff. Add cream of tartar and whip until glossy. Gradually add sugar continuing to beat.
Spread meringue on top of pie, taking care to get the meringue onto the crust. Put in oven just long enough to brown the meringue.
